Perfecting Mash Potato for Cuz Clara

For Cuz Clara...
I have been trying to perfect mash potatos. Trying out different types of potatos sold in supermarkets in SEA, trying different methods for cooking and I have come up with the easiest way to make mash. If you want more flavour and you don't have any vegetarian guest, bake the potatos with chicken fat, chicken stock or bacon fat.

Recipe
500g Russet Potato
1 egg yolk
1/2 cup cream, whipped or thick (adjust to taste and texture)
1 tbsp soft unsalted butter
salt & pepper according to taste

Method
-Wash potato with skin on. Lay them out on a baking tray and bake in oven for 1 HR at 200*C
-Take out potatos and half them length wise. Dig out potato with spoon and put in a bowl big enough to mash potatos
-Mash potatos immediately. Add soft butter. Mash. Add salt and pepper and TASTE.
-Add egg yolk. Mix. Add cream till you get desired texture. Mix. TASTE.

Your party will be a hit cuz!! xoxo
